Roasted Red Pepper Hummus
Ingredients:
- 3 cups of cooked chick peas
- 1 jar of roasted red peppers
- 2 Tablespoons of tahini
Put all of the ingredients in a food processor and mix thoroughly. Salt to taste (if you used canned chickpeas you’ll need less salt). Garnish with fresh chopped parsley and a tablespoon of olive oil (EVOO) on top of the dip.
If you don’t have tahini (sesame seed paste) you can make your own. Grind about 4 table spoons of sesame seeds in a seed grinder until it is the powdery. Then mix in a couple table spoons of EVOO. Toast your sesame seeds before grinding.
Also, feel free to use canned chickpeas if you don’t have the time to soak and cook dried chickpeas. If you like things a bit spicy add a seeded jalapeno or some cayenne pepper during the mixing process!
